Nonni’s “Nobody Needs Dairy Anyway” Oven-Roasted Pork Chops

Ingredients
Bone-in pork chops (bone-in = flavor + respect)
Olive oil (the good one you hide)
Salt & pepper
A squeeze of lemon (Noni’s secret weapon)
How it's done!:
Preheat oven to 400°F.
Pat pork chops dry like you’re offended by moisture.
Rub with olive oil, then season generously. This is not the time to be shy.
Arrange on a baking sheet and roast 20–25 minutes, flipping once, until juicy and glorious.
Finish with lemon juice and stare proudly at your work like you invented pork.

Roasted Potatoes (Dairy-Free & Drama-Free)
Ingredients
Baby potatoes or chopped Yukon golds
Olive oil
Garlic cloves (smashed, not minced—Noni has standards)
Salt & pepper
Add in lots of sliced onions if you like, adds a ton of sweetness that Nonni doesn't have naturally
How Noni Does It
Toss potatoes with olive oil, garlic, herbs, salt, and pepper.
Spread out on a sheet pan—crowding is a sin.
Roast at 400°F for 35–45 minutes, flipping once, until crispy outside and soft like family secrets inside.
